This is our only wine with French grapes, 100% merlot.
This vine was added to the farm by Angiolino Semboloni (third generation) in the 90s.
It represents only a small percentage, on average we produce about 1500 bottles per year.
We carry out an early harvest, usually at the end of August.
It has an alcoholic fermentation of about 22 days at a temperature of 25 ° C / 77 ° F and for the whole time of fermentation the must remains in contact with the skins.
Once the fermentation is complete, we separate the wine from the skins and continue refining in steel for a year.
Finishing a year in steel where the wine has finished the malolactic 'fermentation' and has been purified of the impurities, removing the sediments deposited on the bottom of the tank, the wine is placed in French oak barrels for a time of about 16 months.
After refining in French oak, we make the bottling and place the bottles in a special room in our cellar where the wine will refine in the bottle for 1 year.
